Grading
Food production is largely science, but is also part art. We can definitively measure characteristics like weight, density, moisture, colour, pH, viscosity, particle size, pressure, gas, fines, plate counts, elemental contents, and the like. We can easily record test results for pass/fail test like leakers, premiums, code dates, etc. But food manufacturers also have to deal with grading – characteristics that are neither pure measurements, nor are they purely attributes or pass/fail criteria.
Things like taste, sweetness, bitterness, some colours, texture, etc. where results are part of a scale.
